Land clearing, grubbing and grading is a complicated tasks. If you are not experienced in any sort of landscaping or construction it may end up being too big a task to do on your own. You can then pour the concrete into the hole directly at the height you planned. By clearing and grubbing, the removal of all organic and inorganic matter from the area, digging up all plants, roots and grasses and digging deep to remove any chance of organic material remaining under your foundation. Failing to do this will result in a plant, no matter how small, growing through your foundation and ruining it forever. This cannot be fixed it must be ripped down and redone from the start which often means having to regrade, clear and grub again. If you plan on building a structure yourself but are worried about missing something, not digging down deep enough or simply not having the stamina to finish the task then call a professional.
